Specialty Pans
A "good" steel pan is one which has been "seasoned", a word which means it has
become black after being used several times. Cooking may then be done with very
little fat or oil. To ensure that the frying pan keeps its "seasoning" and in order to
avoid oxidation, wash the pan in hot water without soap, then wipe it immediately
with a paper towel. It may then be oiled if you wish & stored in a dry place. Carbon
or "Blue" steel is not a painted or coated steel. Carbon steel is particularly suited for
the strong heat sources in use in professional kitchens and for intensive home use as
well. The extra long handles are made of steel or cast-iron and solidly affixed with
rivets. These pans are suitable for all types of heat sources including induction.
